My three kitchen knives at present are Henkels "Professional-S" line - highly recommended! I'm waiting for the day when I can afford to purchase cutlery like these or these. I've found that with a little bit of patience and practice (on my older, cheaper knives) with a water stone, such as those sold by Lee Valley Tools, I'm able to maintain a consistent bevel, and can put a truly scary edge on my cutlery.
