Take a boneless chicken breast, cover it in rice flour. Saute it in olive oil or butter until it is done, and set it aside. ( the rice flour is simply to keep it from sticking to the pan.) Add lemon jiuce and garlic to the pan and saute it for two minutes. Re-add the chicken to re-warm it. VOILA! Chicken Francais (sort of!) Serve over rice (preferably steamed in chicken broth,) with a side of steamed broccoli with lemon juice drizzeled over it.
