Ingredients
1/2 cup Raisins, chopped
1/2 cup Sultanas
1/2 cup Currants
1/4 cup Glace/Marachino Cherries, chopped (or more if desired)
1/4 cup Mixed Peel
1/4 cup Glace Fruit (or more if desired)
1/4 cup Brandy/Rum/Fruit Juice
1L Ice Cream (softened)
1/2 cup blanched almonds, chopped
1/2 cup Cream
1/2 cup Choc Bits/Chips (or mre if desired)
Method
1. Combine ingredients apart from Ice Cream, Almonds, Cream, and chocolate, and leave to soak overnight.
2. Mix together the soaked fruits, ice crea, almonds, cream and chocolate bits. Pour into pudding basin (or basins) and leave in freezer to freeze until firm.
3. Immerse basin in hot water for a few seconds, and drop onto plate for serving. |
