Burning CD's can be done with xcdroast (as noted), which is quite powerful or with the KDE-program K3B which is more immediatly intuitive. Should be bundled with any decent KDE distro.

If you're planing to burninate DVDs, you might have to get a special version of cdrecord.

Inevitably, there will also be lots more answers.
