As you noted, oil is thicker when it's cold, and that produces higher pressure. As the oil warms up, it thins out and this makes for less pressure.
BUT -- there is a pressure relief valve in most engines that should regulate the pressure to some extent, smoothing out the fluctuations. If you have wild fluctuations, there may be more serious problems, either with the oil pressure regulation or even deeper in the bowels of that mighty engine.
