People who haven't ridden motorcycles tend to hit the brakes if they get a fright. She looked in the mirror, and saw this car come out of nowhere (ie it wasn't there a few minutes ago) at (to her) horrendous speed. She gets a fright and slams on the brakes.Instinctive reaction.

That's the problem with this sort of speed on roads with other traffic. You can't assume that the other drivers will react as an experienced high-speed motorist would. They are too unpredictable.

Nice empty road, good visibility, dry road, fast car ? Let her rip, for a bit anyway. Busy road , other traffic ? Pull it back.
