Many people who would be good for those jobs are making more money on welfare at this point; if they had to pay a normal minimum wage for those working those jobs, prices for the goods they produce would go up significantly for the end consumer - no businessperson worth their salt absorbs such expenses themselves, they pass it on to the next person in the chain, and it works its way through.
