Intel EtherExpress Pro10/100(/1000) are the best NICs out there. Nothing is better. Period. I just bought 35 of them off eBay :) In reality, if you're moving a few megabit, just about any machine with PCI will do. I'd also suggest m0n0.ch/wall, it's very small but amazingly powerful. It can also run from CD+floppy or from HDD or CF... check it out. (It will run on a regular PC too)
