Plug the printer into one of the W2k boxes. Install LPD-Win and Ghostscript, which makes the W2k machine looks like a 'nix LPD server with a generic Postscript printer. Set up the other W2k box to print via samba, and set up the macs for IP printing to the w2k server.

I did something like this for my LAN (winXP, MacOSX, slackware), and put up a howto with links to the software here.
