At least not for "bolognese" anyway, I find it better if you just start throwing ingredients in the pot. Minced beef is easier to work with than sausage so I tend to use that as the meat part, fry it first so you're sure it's cooked though. Add garlic to the pan if you're going to while the meat is frying.

Tomato comes from wherever I can get it, I prefer to use fresh baby tomatoes but I'll throw canned plum ones in instead. Add oregano and basil to taste, dice a carrot and throw that in too. Simmer until the carrot is cooked then add a dash of Worcestershire sauce.

Substitution is the key though. As long as you have the beef and the tomatoes it really doesn't matter too much what else goes in.
