given that you want to connect it to a windows box connected to the internet.

2k or xp support multiple network cards so no reason why you couldn't build the setup you want. Use a different unrouteable subnet for the link between the two computers and I don't think the second one would be able to get out to the net. However anything nasty running on the main windows box would still have access to the second system.

Alternative setup : old PC (pentium / high end 486 w/ 16M RAM) connected to internet. Run Linux based router on the system. Burn the OS on a CD and use a ram drive for temp files, that way no HD and no risk of any perminent holes even if someone does find a way in. Old PC connects to both the games box and the stable box and runs as a router. A lot more work to set up but it would give you a more secure windows set up and control over exactly what can go from one system to the other.
I'm not sure if a linusys box will let you specify un-routable addresses for some of the range and so give you a simpler way of obtaining much the same result.
