Well what I think I'd end up doing is making my own dress. Something medieval that you know kind of speaks to me. I like cloths from that time period and I've seen several nice patterns out there for them. I do know how to cook and such tho I've seen SCA weddings.(handfastings but they do get some JP to dress in garb to officially marry them sometimes but other weddings are in persona for show there are those few real ones)

I think honeymoon wise too I'd do something simple just a cabin of a family members or something. I believe weddings/handfastings are for those in love and what they do is about that love not about what other people think they should be doing.(I think thats why some weddings end up so big. Bridge and groom end up doing it more for their families and then have to deal with wedding stress and expense stress that starts off a marriage less than happily) I think my family will leave me alone. My one aunt might grumble but other than that they'll leave me alone. They just want to see me happy. Which more families should do.(ie butt out of marriages/marriage plans)
