Charcoal is nice ( not the bricquet type ) when you have the time. Perhaps with some apple wood for flavor. Gas is nice and quick. Either way, one needs to know whether you are grilling, BBQing or smoking. Which depends on what's cooking. Ribs need indirect heat and 8 hours to do right. Burgers are grilled over direct heat for no more than 15 minutes. You need them done ( for food safety ) but not carbon for carbon dating.
