Running a dula boot Linux/Windows setup is no problem at all, I'm doing it myself, solely so that I can play Warcraft3 and Homeworld2. =)
With all the apps available for Linux today there are hardly any tasks that are windows only these days. Also, the installation process is a breeze, and with the lovely UFie community there's always plenty of help available. Myself I use Gentoo linux, which depending on your experience with *NIX enviroments may or may not be suitable for you. I've had some OK experiences with what used to be Red Hat, but I feel that Gentoo is far superior for learning stuff like server administration.
