gentoo stage1 took the better part of a weekend (the first time i did it on dialup) to get done with just the install. X and fluxbox took another couple hours. things went faster once i got 256/256 dsl. I was able to redo it onto a bigger hard drive (also faster with dma support) and it took a good day of compiling/downloading to get to where i reboot into the system.
another reason the first time took so long was a bug discovered in bootstrap.sh that i didn't find had hung till the next morning, so downloading the new .sh and recompiling everything added to the time.
but now that it's up and running it's reasonably responsive for how fast the machine is, much moreso than if i'd installed win2k on it.
and yes, the install guide is wonderful. i recommend USE flags of -gnome -gtk -qt -kde and probably some others, this will keep apps (as much as possible) from using the bulky libraries and desktop environments. fluxbox is a pretty quick compile, X is quite a bit longer, 3 hours or so IIRC.
ultimately i'd say plan on a weekend to get it running without the livecd, and a week of on and off downloading/compiling (assuming you have wo*k/classes to go to during the day) to get it set up with things (firebir--erm fox and thunderbird take a while to compile, the binary versions are suggested if you're impatient; but then again links and pine/mutt/whatever work fine, too) to make it usable.
