...only use sourdough, never yeast. Personally, I think it makes the bread a bit more sour, which may be better or may not be, depending on my mood.

One thing is sure - I'm not going to start making sourdough when I only bake bread twice or thrice a year. It's good in a bakery, where you keep using the remains of the sourdough as starter for the next batch, and you keep making fresh (or not-so-fresh) sourdough all the time.
