BITPIX=8, probably means 8 Bits per pixel, colordepth or something similar.
NAXIS=2, means two axes, a two dimensional dataset
NAXI1=500 / NAXIS2=500 looks like the axis lengths, 500 samples squared
SIMPLE=T, might be a T/F for True/False flag to distinguish between two data formats.
HISTORY, seems to be a flag that enables obverreading of version info etc. Probably terminated by the END string.

The rest seems to be in unknown characters. Some looks like asciiart. Maybe you should try plotting every eighth character in a 500x500 field and check for patterns.
