We don't justify it by talking about their sentience. We justify it by talking about their usefulness. Killing something because it's non-sentient is akin to saying we should go on a mad killing spree. There's no reason for it.

Anthropomorphizing is for people with too little desire for accepting something as it is and who want it to be more like them. It has nothing to do with why we can kill animals for useful purposes.

I can't say what's immoral or not, but I suspect you just made an illogical connection between the value of killing for usefulness and the value of killing for the sake of creating "art". The needs are greater.

Some humans need killing, IMO, so that argument is not acceptable either. (I'm telling you, using "we" is just not working for you.)

The need to kill something should be measured against the value of that thing's life. To make meaningful Art absolutely does not require the killing of some living thing (save maybe brussels sprouts). To make clothing for protection against the elements often does.

I could speculate as to how these reasonable justifications evolved into what we have today, but that's probably just going to sidetrack you even more.
