also, in the states, food servers and bar tenders get lower than minimum ($2.15/hr) and are expected to live off of tips. This is all federally mandated. The states cannot go below this, but may increase the minimum hourly wages. Also, waiters and waitresses get taxed on their hourly wage + 8% of their food and drink sales. So, if you don't tip at least 8% of your food bill then you are effictively taking money from their pockets to live. It's customary to tip 15-20% or 10% for less than average service.
