My grandmother from southeastern Arkansas put together a cook book of the recipe's she has gathered over the years. The recipe I have:

4 squirrels, cut in half
1/2 cup oil
1/2 cup flour
1 cup each onion, celery, bell pepper, all chopped
2 cups mushrooms, halved
1 pound okra - fresh is possible
2 tablespoons zatatain liquid crab boil
1/2 cup honey
Cavender's Seasoning
Salt, pepper, and Cayenne pepper

  1. Cover suirrels with water and simmer in covered pot for 1 hour.
  2. Meanwhile, make a brown gravy with oil and flour, stirring constantly over low heat.
  3. When bronw, add next 4 ingredients. Cook till veggies are done; set aside
  4. Remove squirrels from water, cool, saving some stock. Remove meat from bones.
  5. Combine all ingredients with stock. Add more water if needed.
  6. Cook 1 hour or till done. Serve over rice.
