If you pick them up and cradle them, or draped across your
shoulder, or supporting their feet in your arms then:
1) it's a more supporting/affectionate style of carry
so they think they've been rewarded for the behavior
by getting attention fro you.
2) they have more control, or ability to jump down if
their feet are in contact with yoyur body. If you carry
them with feet dangeling, then cats loose most of that
control, and go where you take them. You can still support
them well, with your hand/arm under their torso/stomach.
3) If this is not your usual way to carry, then they know
that something is 'different', and you are not pleased.
