I need to stay away from electrically conductive materials (knew I'd missed something out).

The sheet material is just for the experimental phase. I will eventually seal the components in a polymer of some description. The components have some fine wire connections that need to be insulated from the cooling bags and any other interfering materials. Also there will be a network of temprature sensors over the bags for monitoring.
