The only reason any logging system would use postfix would be to receive incoming logs mailed to that box from other systems. Local mail will be handled by a different local delivery system (most likely procmail or mailx).

In fact, neither Postfix nor Sendmail do local deivery anyway. They handle all of the E/SMTP protocol and pass things coming in on the SMTP port (25) to the local mail delivery system.
