However AFAIK those rules break down after the event horizon. The strong and weak nuclear forces are broken down and particle physics don't work as they should.

One book with good high density physics in it (although it is about life on Neutron stars) is

Dragon's Egg by Robert Forward, 1981, Ballantine. 
Also proposes a life form that can live on the surface of a neutron star. Sequel is called Starquake (1985, Ballantine).
