It's all got to do with wavelengths. IR emitting LEDs are designed to emit within a specific wavelength. Same thing goes for lasers, both IR and Visible-spectrum.
Your heated metal surface may have emitting in the IR range, just not one detected by your camcorder.

Just my two bits - and if I'm wrong, well then, I am..
