but I grill the eggplant(don't overcook, though, it'll shrivel to nothing), then peel and seed it. Throw it in the food processor with tahini(start with a little, easy to add more), fresh lemon juice, a little garlic, a little salt, a bit of hot sauce, and puree. It should be smoky and mellow, with no flavors overwhelming but very subtle. here's one version, but I'd advise against the oil, parsley, and pine nuts, and it's better if you cook it on the grill.

Another good way to cook eggplant is baigan bharta, an Indian dish.
