"Bonne femme" soup is 500g potatoes and 4 leeks and 1 carot for colour and sweetness. Chop the leeks into thin rings, peel and dice the potatoes and carot. In a big pan put 2 soup spoons of oil (or butter) and fry the leeks gently until they have softned. Add the potato and carot cubes salt and pepper to taste. Add 1 dl white wine and let it boil off a bit. Then add a litre of water and bring to the boil. Once it is boiling lower the heat and cover. Let it cook gently for 45 minutes. Pass it through a vegetable mixer (if you don't have one use a blender but it is not as good that way). Serve with a bit of fresh cream stired in and some parsely for decoration. :) Voila! Bonne femme soup. Actually, it's not bad is you have stomach problems, it is bland enough that it will not irritate while still being tasty and filling. OTOH for the first few days of a gastritis you will be better off with boiled rice and dark chocolate. :) {{{Klymer}}}
