first, the water coming out of the drip-filter unit is not at the boiling point - since it isn't flashing off as steam (there is an optimal temerature for extracting flavour from coffee at 1 atmosphere of pressure). second, the coffee (once made) is kept on hot plates which can significantly raise the temperature. Have you ever put your hand on one of these hot plates? Pretty hot eh?
