Vegetables don't belong in American ice cream. Cherry blossom trees aren't the big fruit producers, though. They've been cultivated for the flowers. Fruit cherries are horribly expensive there. It was probably azuki, but it could have been anko. Honestly, I don't know what (if any) difference there is.
