It's required. Originally an expression of either wealth or genuine appreciation for good service, it became such a big social statement that it was made an integral part of the service industry in America (and other places). Now, the wages these people make are deliberately lowered so that they have to make tips in order to get fair pay, and the tips are even taxed.

Some would say that ensures good service, but they would be wrong. Many people tip to avoid seeming cheap. Others tip because they know about the unfair wages. And still others tip because they had the misfortune to have 4 friends eating with them - it's an "automatic gratuity". Talk about oxymorons. And the service continues to suck.

Strangely, in Japan - where tipping is not done - the service is astounding.
