obese people are not slaves... that's plain silly... they choose what to eat
I think they are. Slaves of their own vices. As more extreme example let's take chain smokers. Most of them have been hospitalized (because of their smoking) and all of them do know that smoking is killing them. But why do they continue? Surely not because they like it. They, most probably, hate themselves because of it. They are too weak to quit. Specially when they're stressed. In that moment tobacco gives them joy. But immidiately after that they start coughing. Not very pleasant.
With junk food there is no much of a body addiction, but only mind. Seemengly nothing stops you to discontinue with excessive eating. So why do you not? Because you are too weak. Like i explained with that good/dark side, it is a lot easier to take the dark path (eat, eat, eat). If you had been strong (in will) you wouldn't be in situaion which has similarities to sickness.

Yes, yes there is a difference.
Responsibility is a skill. Skill which has to be continually developed and sharpened. That takes time and effort.
Freedom is state. Responsibility is condition for freedom. Therefore, freedom does not come by itself. It has to be worked on.
i don't know a single person who is addicted to hamburgers... not a single person who HAS to have a hamburger no matter what... and you become just as fat if you eat healthy food in the same quantities as junk food... the problems isn't just in what you eat, but how much you eat... and a big big part is also lack of exercise... another problem is in people who medicate their problems with food, depression for example... these people have deeper problems...
Yes, it seems that i have exagorated there. But they have addiction to food. I do not belive you phisically can eat that much healthy food. Anyway, vegetating in front of a TV whole day is no small problem (or should i say consequence). But all that has the same root. Weak will. When you can not get out of bed because you're lazy and when you can't eat healthy food because you can't wait for it to be cooked you have a problem. You have weak will. Because of that you can't sacrifice for some greater good (future, for example; give up drinking and die with dignity, instead of rot in some God forgotten hospital). Hence, you are not free. When you are not free you are a slave. A slave of your own lack of will. Sad.
I don't know how does this work out for you but to me, suprisingly, all of this fits perfectly. Everything seems to suport something else. This it the first time i really consider it and i'm quite suprised.

Precisely. To find (or raise) a person who will not exploit that position is very tough job. Maybe impossible. I don't really know but as an idea it works quite good. With one person you have one morale, one law and there are no questions weather this can or can't be done. Remember, not one person for the whole world, but rather, for smaller comunities.
and who would these "wise and righteous people" be? who decides that?
Uhh, that sounds like old, worn out phrase. Well, really, i don't know. I just know, in order to work, it has to be that way. This may be another imposible ting that sounds nice as an idea.
All in all, thank you for pointing out some of the things i said and, despite we mostly disagree, i respect your opinion. Partaly because i failed to fully explain you all my thoughts. Specially the part about slaves. Hope this helped.
