UNIX mail is quite a bit more complicated than simply "setting up a mail server." Getting sendmail configured and running only gets you SMTP traffic. What if they want POP3 or IMAP? Well, that's a different daemon. What if they want mail filters? Another program. You get the idea.
The fact is that what is commonly called a "mail server" is actually a mail SYSTEM. You need to know what specifications the mail SYSTEM should have--presumably that includes SMTP, but you need to know what else they are after--spam filtering, mail forwarding, domain hosting.. what? Once you have this information, designing the system (and choosing its components) becomes much easier.
As far as sendmail-alikes go, I'm happy with Postfix.
