I had noticed some too! Here's the ones I noticed.
.. Chapter One... A long-expected party. Gandalf mentions this.
.. Chapter Four... A short cut to mushrooms. After the tumble down the hill, the hobbits say it was a shortcut. "to what"? to mushrooms!
..Chapter Nine... At the sign of the prancing pony. Not mentioned out loud, but we see the sign.
..Chapter 10... Strider. "Nough said.
.. Hmm. From there on out, many of the chapters are just places and things like the council of Elrond, the Bridge of Khazad-dum, Lothlorien, etc. So they are in there, but I can't tell if they are meant to be as chapter titles or not. Also, there is one tickling the back of my mind.. I think someone mentioned "A Journey in the Dark" (book 2, chapter 4) during the Moria sequence. And "The Ring Goes South" (Book 2, Chapter 3) a bit earlier. Anyone else got any others to add?
So, there may be every chapter mentioned (at least, all the ones they USE... no Old Forest or Bombadil. *sighs*)
