Probability is defined as one devided by some value. A 20% probability is 1 devided by 5 or 1 in 5. Since infinity is a number you can devide 1 by it. One in infinity is a definition for the impossible that I have heard proposed. Now depending on the size or your infinity (ie rate at which you apporach infinity) you can calculate the posiblity of things that have a one in infinity probablity. Now if something is impossible (ie a one in infintity probablity) then it will occur an infinite number of times in a system that approaches infinity at a geometric rate.

One final note, space is infinite if four dimension, that means that anything that is impossible has probably already occured an many, many time somewhere in space...
