MSG is produced naturally in the fermentation process used to make soy sauce, fish sauce, oyster sauce, etc.. The MSG listed on the label is only the Extra MSG added to what was already there. In many prepared foods, the labels list ingredients which themselve contain MSG, but ingredients of ingredients do not need to be listed.

For me, excess MSG causes flu-like symptoms lasting up to 3 days.
