SuSE and RedHat - both appear to have pretty good installation utilities - if you want a bare minimum install - both give you several options of pre-defined packages for different scenarios - also - you can customize what you want - picking and choosing from each set of programs (a bare installation would be the a series and one or two others - can't recall which exactly - most everythign is an option - even in the pre-defined packages - you can unselect things you don't want and select things not included that you want. I can't speak for any other distributions tho. I will say that SuSE's manuals are pretty good.
